Market lists

Resort Restaurant can generate market lists (ingredient ordering lists) from menus and functions. You can then print these market lists in several formats including supplier order forms. When printing, you can combine several different market lists to be printed as a single market list.

 

How do market lists work?

 

Resort Restaurant generates market lists from the component ingredient/recipe lists in menus and functions.  Each recipe in the menu or function is broken down into its constituent ingredients and a list of all ingredients and quantities required for the menu or function are listed in the market list.

 

The market list shows the following details for each ingredient:-

 

Usage quantity/unit. This is the usage quantity of the ingredient as calculated by Resort Restaurant. For example the ingredient flour would normally have a usage unit like 'grams' or 'ounces'. This quantity will be in the unit's default usage unit.

 

Recommended purchase quantity/unit. This is the quantity of the ingredient required rounded up to the nearest purchase unit. Flour for instance, is typically purchased in 25kg bags, so, if the usage quantity was say, 12300 grams, this would round up to 1x25kg bag for the recommended purchase quantity/unit.

 

Actual purchase quantity/unit. This field is initially set to the same as the recommended purchase unit.  You can edit this quantity to set the actual quantity that you wish to order from the market list. Say the program recommends that you order 1x25kg bag, and you know that you already have 20kg in stock, you can set this field to zero and no flour will be ordered when you print the market list.

 

Supplier. This is the supplier that the ingredient is to be ordered from. You can select any supplier from the list displayed in the market list forms. Resort Restaurant will normally set this field to the first supplier associated with each ingredient in the market list. If there are no supplier/ingredient associations for a particular ingredient, the program will select the first supplier (alphabetically) for the ingredient.
